Why is everyone criminalizing gluten, dairy, and sugar — and is it actually true?

The internet has turned three foods into villains. The truth is more nuanced — and far more useful — than a blanket ban.

Gluten

Not the devil. Not neutral either.

For roughly 1% with celiac and a meaningful slice with non-celiac gluten sensitivity or wheat allergy, gluten is genuinely harmful. For most others, the problem is often modern wheat processing, glyphosate residue, fast-rise industrial bread, and a stressed gut lining — not the protein itself. Sourdough, heritage grains, and a calm nervous system change the story for many people.

Dairy

Depends on the dairy — and on you.

A large share of adults don't fully digest lactose, and A1 beta-casein can drive inflammation and mucus in sensitive people. But fermented, grass-fed, A2, or sheep and goat dairy is well-tolerated by many — and a genuine source of protein, calcium, K2, and probiotics. The question isn't "dairy: yes or no." It's which dairy, in what state, for which gut.

Sugar

The one that mostly earns its reputation.

Added sugar and refined fructose genuinely drive insulin resistance, fatty liver, mood swings, and inflammation — especially in liquid form. But a bowl of berries, a ripe mango, or raw honey in tea is not the same molecule as a soda. The real enemy is ultra-processed sweetness engineered to override fullness, not fruit your grandmother recognized.

Undereat protein, run low on magnesium, B12, iron, vitamin D or omega-3s, and the machinery slowly stalls. No supplement fixes a diet that isn't feeding you.

    Elimination

    The quiet art of letting go

    What doesn't leave, poisons. Daily bowel movements, healthy sweat, deep breathing, a working liver and lymph, restful sleep, and even emotional release — these are how your body clears hormones, toxins, metabolic waste, and stress. Constipation is not just uncomfortable; it's estrogen and endotoxin recirculating.
